Twisted Eggs Berryhill

Eggs Berryhill is a delicious twist on Eggs Benedict.  GREAT for the weekend! It's a lot easier than it looks!

Ingredients: Eggs, English Muffins, Onion, Mushroom, Green Pepper, Salt Pepper, Butter, Egg Yolks, 1 Lemon
- Toast the English Muffins.
- Saute the sliced onions, peppers, and mushrooms in an olive oil.  Cook them slowly on low heat until the onions are translucent and well cooked.  Salt and pepper to taste.

Fakoncakes!

THIS WAS DELICIOUS! And you mammal eaters can use real bacon. Fakon is delicious as well!  Shoutout to my husband who initiated this on one of his dinner nights!






I'm not going to tell you how to make pancakes, if you don't know how to make pancakes maybe you should start with scambled eggs.

Ingredients:  2 cups flour, 2 spoonfuls of baking powder, 1 teaspoon salt, 4 spoonfuls of sugar, 2 eggs, 2 cups soy milk, Vanilla Extract, Cinnamon **Vanilla Extract and Cinnamon are the ingredients that make my pancakes delicious! And don't forget the FAKON!

Helpful Tip:  Cook the fakon first and let it cool.  Then re-place it in the pan and add the pancake mix.  You know pancakes are ready to be flipped when they have little air bubbles throughout.

Mardigan's Recommendation: Salty and sweet!!! Give em the look with the eyes for this one! Patience, patience!

Our love of Grenadia/Passion Fruit!



The seeds in the center remind me of little eyeballs!

It's very ugly on the outside but SO DELICIOUS and beautiful on the inside! That reminds me of a fairy tale or some quote that I cannot remember! Here are pictures of the process of making Grenadia juice. We love it and it doesn't need any added sugars or anything, just water!



Washing them with bleach and then rinsing with culligan water, just in case.


I use my immersion blender to grind up the seeds!


Strain the juice from the seeds. Then blend again. (nutrition is found in the seeds so I do not discard them!)

Empty Passion Fruit carcasses!


Mardigan's Recommendation:  Stay close! Remain alert! That blender is bound to get out of hand and splash some drops on the floor!

Hummalsa with Eggs


This delicious breakfast is a great way to start your day with a little heat and all homemade!

Ingredients for 2 people:
For Hummus:  1 Can of Chickpeas, Olive Oil, Salt, Pepper, Greek Yogurt
For Salsa:  Corn, Red Onion (White if you are in Haiti), 2 cans of Tomatos and Chiles, Garlic Salt, Cilantro (Optional)

4 Eggs, Salt, Pepper, FieldRoast Grain Meat Apple and Sage Sausage! (Optional) but feel free to add any breakfast meat you like :)

Hummus: Drain one can of chickpeas. Add chickpeas to food processor (love my food processor!).  Fill 1/4 of the can with water. Add water to food processor. Add a few pinches of salt and pepper.  Add 2 spoonfuls of greek yogurt.  As you press the 'grind' button, slowly add about a spoonful and a half of olive oil.  (The food processor normally will have a hole in the top for slowly adding ingredients).

Salsa: FOOLPROOF! Chop and add whatever ingredients you want. Season to taste.

To fry the perfect DIPPY egg: Use either a non-stick pan or spray a pan with non-stick spray.  Cook on medium heat. Crack two eggs into the pan.  Add salt and pepper while they are still 'runny.' When the edges of the white part of the eggs are starting to no longer be translucent, pour about 2 ounces of water in the pan and cover quickly. It is best if you use a clear cover so you can see the egg yolks.  The condensation from the water should create a white and foggy cover on the yolk.  When the yolk is completely covered, the eggs are done! You will have the perfect yolk consistency.  *You must watch the eggs cook (it takes no more than 2 minutes) or you will overcook them!

Assemble the dish in a deeper bowl or plate. Place a hefty layer of homemade hummus, then add your choice of meat if you would like.  I sneak a few drops of hot sauce on top of the hummus because we love our food spicy! Add the eggs and top with salsa! Delicious! *Cilantro would be a great garnish - In the picture I used basil because it was all I had :)

Jonathan's Recommendation:  Lets add picklies! (Picklies is a wonderful topping unique to Haiti, and I will be adding the recipe shortly! Very spicy and delicious!)
Mardigan's Recommendation:  If you tilt your snout down and look up through your eyes at the humans..you are more likely to get a piece of the meat! If nothing drops - repeat the eyes and add a whimper.

Polette (Polenta + Omelette)



My Mom visited us in Haiti and brought us some fun sun-dried tomato Polenta, which I think she found at a Wegman's. This breakfast was delicious and really make a lot for the ingredients!

Ingredients:  Eggs, Polenta, Vegetables of your choce *I used peppers, onions, mushrooms, tomatoes, Vegetarian Sausage *Field Roast Grain Meat Apple Sage are delicious! Cheddar Cheese (or cheese of your preference)

- In a spoonful of olive oil fry/saute the polenta.  When lightly brown place in pie pan or casserole dish and break up the polenta. It does not have to cover the entire bottom.
-Using the same pan, saute the vegetables and sausage until crispy and golden brown in olive oil.
-In separate bowl whisk up eggs and a splash of milk.  About 2 spoonfuls of milk per 4 eggs. 
-Preheat the oven to 325 degrees.
-Pour the eggs over the polenta. Season with salt and pepper and Italian Seasoning if you have it! Feel free to add any fresh herbs that you have.
-Add the sausage and sauted vegetables. Use a spatula to move them around to make it all one level and even.
-Add grated cheese on top, as much as you would like.
-Place in the oven for about 10-15 minutes until the eggs looked cooked.  You will know when it is finished if you grab it with a potholder and gently shake the pie holder from side to side, if the eggs are still jiggly then put it back in the oven! If they do not jiggle, the polette is finished!

Help yourself to a second piece if you want - it is worth it.

Jonathan's Recommendation: Adding potatoes would be a great idea.
Mardigan's Recommendation:  Don't give up! Be patient...something will fall.  Humans can't make things perfectly...the Polette will fall apart at some point!

Healthy Plantatoes


Do you think these are potatoes? Think again!


Ingredients: Plantains, Salt, Pepper, Oil, Italian Seasoning, Creole Seasoning, Cayenne Pepper, Crushed Red Pepper Flakes

-Slice sides of the Plantain. *It will not peel like a banana *Be careful, the greens of the plantains give a purple juice that will stain unless cleaned with bleach.
-Cut however you prefer. *The pictures are cubed and sliced.
-Heat a spoonful of olive oil in a pan on medium to high heat.
-Add plantains to pan.
-Season with Salt, Pepper, Italian seasoning, Creole seasoning, Crushed Red Pepper Flakes and a dash of Cayenne Pepper.
-Cook for approximately 5-8 minutes depending on the size of your cuts. You will know when they are finished when there is a golden brown crispy layer on the outside of the plantains.

-These are not very good re-heated so eat them all!

Jonathan's Recommendation: Maybe we can try a sweet version?
Mardigan's Recommendation: MMM I love potatoes...

Sweet-n-Healthy Parfait

Ingredients: Greek Yogurt *do your research of the ingredients, we like the brand FAGE Total because it does not contain any added sweeteners, preservatives, powdered milk etc., Fruit of your choice *we did Blackberries, Strawberries, Banana, Rolled Oats, Nut of your choice *we did Peanuts, and will try Walnuts next week, Raisins, Honey (Optional)

-Mix all ingredients together. Measurements are based on your preference. Do nothing with the oats (I know it seems weird) but add the oats in their natural form and it tastes delicious with the fruit and yogurt! Drizzle Honey as a natural sweetener on top. You'll be surprised at how great this parfait tastes. It is sweet and salty! Great start or end to your day. These parfaits are great in the morning or as a dessert.

Jonathan's recommendation: If you are like me and you have a sweet tooth, this is a great way to cure the craving.
Mardigan's recommendation: Don't bother! There is no bacon.


Eggs Berryhill with Citrus Hollandaise Sauce


"Hollandaise sauce! Aaah!" Was that your first reaction? Then you definitely need to try this simple recipe! I made all of this in less than 20 minutes this morning. It is fun and so rewarding when you've realized you created such a wonderful masterpiece that tastes amazing from scratch! No preservatives! *If you must you can buy the packaged Hollandaise sauce but making it all natural is so much better for your health.

Ingredients for one: 1 English Muffin, 2 Eggs, 4 slices of Smoked Salmon, Salt, Pepper
Citrus Hollandaise Sauce Ingredients: 4 Egg Yolks, 1 Lemon, 1 Orange, 3/4 Stick of Butter *I'm all for the real deal, Salt, Cayenne Pepper

For the sauce:
-Fill sauce pan with about 1/2-3/4 cup water turn on high
-Whisk 4 egg yolks, juice from 1 Lemon and 1/2 Orange in glass mixing bowl *Remove all of the seeds 
-Melt the butter in the microwave for about 20-30 seconds. 
-When water is boiling, rest glass mixing bowl on top of the sauce pan *Make sure the water does not touch the bowl, we just want to use the steam.
-Whisk, whisk, whisk. Mix in the butter and continue to whisk. *We do not want scrambled eggs so keep whisking! Once the sauce has thickened and seems frothy remove from the heat. Add pinch of salt and cayenne. Whisk once more.*If sauce is resting on the counter while you are cooking anything else make sure to randomly whisk it so it doesn't get too thick.

To poach the eggs:
One option is to buy a microwaveable egg poacher! We have one and it is great for weekday mornings! However, if possible and you have the time, eggs are cooked much better if you poach them yourself.
-Bring a pot of boiling water to boil. Add 1/3 cup Vinegar *Any vinegar works, I have used White Vinegar and today used Apple-Cider Vinegar
-Crack eggs into boiling water (do only 2 at a time). Cover with lid.
-Remove eggs with a slotted spoon when they appear finished. 2-3 minutes is enough time.

To plate: Place both halves of English Muffin down, then add 2 slices of smoked salmon, place one poached egg on each half and top with salt and pepper. Last spoon the Citrus Hollandaise Sauce on top and let it drip down the sides.

Jonathan's recommendation: Bring the chef some flowers and you will get extra Hollandaise Sauce!
Mardigan's recommendation: Keep an eye in the kitchen! If anything falls don't sniff it to make sure it's edible, just eat it!
