Hummalsa with Eggs


This delicious breakfast is a great way to start your day with a little heat and all homemade!

Ingredients for 2 people:
For Hummus:  1 Can of Chickpeas, Olive Oil, Salt, Pepper, Greek Yogurt
For Salsa:  Corn, Red Onion (White if you are in Haiti), 2 cans of Tomatos and Chiles, Garlic Salt, Cilantro (Optional)

4 Eggs, Salt, Pepper, FieldRoast Grain Meat Apple and Sage Sausage! (Optional) but feel free to add any breakfast meat you like :)

Hummus: Drain one can of chickpeas. Add chickpeas to food processor (love my food processor!).  Fill 1/4 of the can with water. Add water to food processor. Add a few pinches of salt and pepper.  Add 2 spoonfuls of greek yogurt.  As you press the 'grind' button, slowly add about a spoonful and a half of olive oil.  (The food processor normally will have a hole in the top for slowly adding ingredients).

Salsa: FOOLPROOF! Chop and add whatever ingredients you want. Season to taste.

To fry the perfect DIPPY egg: Use either a non-stick pan or spray a pan with non-stick spray.  Cook on medium heat. Crack two eggs into the pan.  Add salt and pepper while they are still 'runny.' When the edges of the white part of the eggs are starting to no longer be translucent, pour about 2 ounces of water in the pan and cover quickly. It is best if you use a clear cover so you can see the egg yolks.  The condensation from the water should create a white and foggy cover on the yolk.  When the yolk is completely covered, the eggs are done! You will have the perfect yolk consistency.  *You must watch the eggs cook (it takes no more than 2 minutes) or you will overcook them!

Assemble the dish in a deeper bowl or plate. Place a hefty layer of homemade hummus, then add your choice of meat if you would like.  I sneak a few drops of hot sauce on top of the hummus because we love our food spicy! Add the eggs and top with salsa! Delicious! *Cilantro would be a great garnish - In the picture I used basil because it was all I had :)

Jonathan's Recommendation:  Lets add picklies! (Picklies is a wonderful topping unique to Haiti, and I will be adding the recipe shortly! Very spicy and delicious!)
Mardigan's Recommendation:  If you tilt your snout down and look up through your eyes at the humans..you are more likely to get a piece of the meat! If nothing drops - repeat the eyes and add a whimper.
