Cheerios Crusted Salmon stuffed with Goat Cheese

Kids would love to be a part of cooking this recipe! 
Ingredients: Cheerios or any cereal you might have in the pantry (we used Honey Nut Cheerios), Cinnamon, Salt, Pepper, Thyme, Goat Cheese, Salmon Fillets, 1 gallon size ziploc bag

-Preheat oven to 425 degrees.
-Slice a pocket into the thick part of the salmon fillet. The slice should be parallel with the tabletop. Stuff with goat cheese.
-Add about 5 cups of cereal to the ziploc bag. Add 2 dashes of cinnamon, dash of Thyme, salt and pepper. *Now the kid part. Smash all of the cheerios inside of the bag until about 80% of them are no longer the "O" shape and they are looking like breadcrumbs.  *The Berryhill way is to use a spatula and use the weight of your body to crush the cereal. Keep bag off to the side in the corner in case you need to add some cereal later!
-Place the salmon in the plastic bag and make sure all sides of the salmon has some cereal sticking to it.
-Have a pan hot with oil and sear both sides of the salmon *you should hear a sizzle when you place it in the pan, usually 1 minute a side, before placing it on a baking sheet. Drizzle with olive oil to get brown on top.
-Keep an eye on it in the oven, approximately 10-12 minutes.
-After placing it on the serving plates, add finishing touches.

Jonathan's Recommendation: Next we are trying this recipe with Count Chocula cereal!
