Eggs Berryhill with Citrus Hollandaise Sauce


"Hollandaise sauce! Aaah!" Was that your first reaction? Then you definitely need to try this simple recipe! I made all of this in less than 20 minutes this morning. It is fun and so rewarding when you've realized you created such a wonderful masterpiece that tastes amazing from scratch! No preservatives! *If you must you can buy the packaged Hollandaise sauce but making it all natural is so much better for your health.

Ingredients for one: 1 English Muffin, 2 Eggs, 4 slices of Smoked Salmon, Salt, Pepper
Citrus Hollandaise Sauce Ingredients: 4 Egg Yolks, 1 Lemon, 1 Orange, 3/4 Stick of Butter *I'm all for the real deal, Salt, Cayenne Pepper

For the sauce:
-Fill sauce pan with about 1/2-3/4 cup water turn on high
-Whisk 4 egg yolks, juice from 1 Lemon and 1/2 Orange in glass mixing bowl *Remove all of the seeds 
-Melt the butter in the microwave for about 20-30 seconds. 
-When water is boiling, rest glass mixing bowl on top of the sauce pan *Make sure the water does not touch the bowl, we just want to use the steam.
-Whisk, whisk, whisk. Mix in the butter and continue to whisk. *We do not want scrambled eggs so keep whisking! Once the sauce has thickened and seems frothy remove from the heat. Add pinch of salt and cayenne. Whisk once more.*If sauce is resting on the counter while you are cooking anything else make sure to randomly whisk it so it doesn't get too thick.

To poach the eggs:
One option is to buy a microwaveable egg poacher! We have one and it is great for weekday mornings! However, if possible and you have the time, eggs are cooked much better if you poach them yourself.
-Bring a pot of boiling water to boil. Add 1/3 cup Vinegar *Any vinegar works, I have used White Vinegar and today used Apple-Cider Vinegar
-Crack eggs into boiling water (do only 2 at a time). Cover with lid.
-Remove eggs with a slotted spoon when they appear finished. 2-3 minutes is enough time.

To plate: Place both halves of English Muffin down, then add 2 slices of smoked salmon, place one poached egg on each half and top with salt and pepper. Last spoon the Citrus Hollandaise Sauce on top and let it drip down the sides.

Jonathan's recommendation: Bring the chef some flowers and you will get extra Hollandaise Sauce!
Mardigan's recommendation: Keep an eye in the kitchen! If anything falls don't sniff it to make sure it's edible, just eat it!

  1. You MUST use real butter! Just made this again this morning and used "Country Crock" and the sauce did not work.
