Faux Veggie-Reuben

  
Inspired by a recent Arby's commercial showing delicious images of Corned Beef Reubens, I was determined to create a vegetarian-friendly light on the calories reuben!  It is definitely equally delicious!  Arby's feel free to contact me if you'd like to add this to your repertoire...

Ingredients: Your choice of fresh bread *we used swirled pumpernickel/rye bread from the bakery that day, Swiss Cheese, Sauerkraut *see Sauerkraut recipe under the "sides" tab for the Berryhill recipe with a unique twist, Remoulade Sauce *see Remoulade Sauce under the "sides" tab for the Berryhill recipe, Sliced Deli Meat *normally is corned beef. For you vegetarians, try using the LightLife SmartDeli Baked Ham...I promise! I will tell you how to make it taste delicious!

-Preheat oven to 350 degrees.
-Heat Berryhill Sauerkraut and prepare Berryhill remoulade sauce.
-Place sliced bread in the oven, flip once one side is lightly browned and toasted.
-Heat pan and spray with non-stick cooking spray.  Add sliced deli meat. About 45 seconds to 60 seconds per side; don't forget to flip.  It should get somewhat crispy and smell delicious.  It is okay if some edges are burnt, more flavor!
-Continue until you have 6 slices cooked per sandwich *If you are a calorie counter like I am and my husband is by default...the LightLife SmartDeli Baked Ham is a great choice for you! Only 70 calories for 4 slices.
-To assemble the sandwich spread a generous serving of the Berryhill Remoulade Sauce on the bottom.  Add the sliced meat. Top with swiss cheese. If your sauerkraut is hot you can immediately top with sauerkraut and voila! Your sandwich is finished. *If you are still learning to multi-task in the cuisine have no fear! Just place the bottom half of the sandwich in the microwave for 25 seconds before adding the sauerkraut to melt the cheese.

Jonathan's recommendation: Next time I hope she makes fries to soak up the sauce that drips from the sandwich.
Mardigan's recommendation: Sauerkraut is NASTY! WHEW, opened up my nose! I can smell more things outside after Mom made that stuff!
