Spinarlic Fork-Mashed Potatoes


Ingredients: Small Potatoes *we prefer Trader Joe's Teeny Tiny Potatoes, see image below, 2 Cloves of Garlic, 2 cups of Spinach,  Spoonful of Greek Yogurt, Spoonful of Butter, Salt, Pepper, Italian Seasoning

-Boil potatoes in salted water until fork tender. *when you can stick a fork through very easily
-Heat pan with 2 spoonfuls of Olive Oil. Add 2 minced cloves of Garlic and 2 cups of spinach. Remove from heat once all spinach is 'wilted' and almost a 'slimey' consistency. Pour into a bowl to cool before added to potatoes. *this is so that the spinach doesn't continue to cook while we pay attention to the potatoes.
-Drain potatoes.
-In large bowl or the same pot, fork mash all of the potatoes by just pressing with the back of a fork until the potato 'pops' and is a mashed consistency *recruit your hubby or an older kid to do this, it gets tiring!
-Add spoonful of butter, spoonful of yogurt, season generously with Salt, Pepper and Italian Seasoning.
-Add the bowl of Spinach and Garlic.
-Stir and enjoy!


Jonathan's Recommendation: Sprinkle a little cheese on top.
Mardigan's Recommendation: Raw potatoes are a waste! Wait until they are cooked.
