Raisinut Swordfish
Super healthy and unique way to make fish!
Ingredients: Swordfish Fillets *we love the ones from Trader Joe's, always impressed, Raisins *unsweetened, 1 Lemon, Walnut Pieces, Salt, Pepper, Spoonful of butter
-Heat pan with 2 spoonfuls of Olive Oil
-Add about 1/4 cup of raisins and a handful of the walnut crumbles
-Make sure to keep stirring the raisins and walnuts, saute for approximately 3-4 minutes
-Add the juice of half of the lemon
-Salt and Pepper Swordfish, place in pan *seasoned side down and can be on top of raisins and walnuts, no biggie
-Salt and Pepper Swordfish*should be the unseasoned side
-Cook for about 3 minutes one side, and flip
-Squeeze the other half of the lemon over the Swordfish
-Add spoonful of butter, move around pan to touch all edges of swordfish as the butter melts
-Swordfish should get a nice crust from the butter, should be finished after 3-4 minutes.
Garnish with lemon zest.
Mardigan's recommendation: Don't eat the raisins! Grapes are toxic for us four-leggers.
