Veggikin Pot Pies


These little pot pies are the perfect meal to have if you are looking for a healthy comfort food! Great to make with friends. We made them here and they were a great way to spend an evening cooking together!...and of course, enjoying the final product! They are almost too eye-catching and adorable to eat!

Ingredients:  1 Package of Pie Crust (or you can make your own), Ramekin's! or a Pie Baking Dish, All-Purpose Flour (or whatever type of flour you prefer), 2 Veggie Bouillon Cubes or Vegetables Stock (about 6 1/2 cups), 2 Tablespoons Butter, Minced Garlic, White Onions, Frozen Peas (or canned), Carrots, 1 egg, Salt, Pepper, Crushed Red Pepper Flakes, Garlic Powder, Dried Rosemary

-To begin, chop up all the vegetables into bite-size pieces. We cooked for 8 people, so we had roughly 2-3 cups of each vegetable.
-In one pan over medium heat, add the diced onions and 2 spoonfuls of minced garlic or 3 garlic cloves (minced).  Add 2 dashes of crushed red pepper. Saute until the onions are cooked through and translucent. (7-10 minutes).
-In a bigger pot, melt the 2 Tablespoons of butter. Once melted, add 2 spoonfuls of flour. Whisk together. While whisking, add two cups of vegetable stock. (If using bouillon cubes, dissolve the cubes in hot water first). 
-Bring pot to a simmer. Add carrots and potatoes. Add 4 dashes of garlic powder and 4 dashes of Dried Rosemary. Salt and Pepper.
-The onions should be about finished, add the onions to the pot.
-Add two more cups of vegetable stock.  Add a few more spoonfuls of flour and whisk away!  Add the last two cups of vegetable stock and whisk.
-Preheat oven to 400 degrees.
-Let simmer for about 10 minutes and check the consistency of the liquid.
-It should be slightly more liquidy than a normal gravy consistency.  If it is still very liquidy, continue to add flour and whisk. Only do one spoonful of flour and whisk to see what consistency it becomes.  When you think it is a good gravy-like consistency you can pour the mixture into the ramekins or pie plate.
-We put pie crust on the edge of the ramekins and then made circles (using the top of one of the ramekins as a cookie-cutter) to secure the top.
-Cut three slits to allow the pie to breath as it cooks.
-Whisk one egg, brush lightly on top of each miniature pot pie.
-Place in oven.
-They will be finished after about 20 minutes. When the tops are golden brown, remove from the oven and let cool for 2 minutes.
-Enjoy!



Mardigan's Recommendation: You'll need reinforcements for this one! I had my three furr friends with me. We patrolled the entire floor. Remain calm. Something will fall from the counter...INCOMING!
