Berry'HILL' Cobbler

This recipe uses strawberries. Use your imagination. Be healthy and be seasonal! Any berries will work. Improvise if you don't have all of these ingredients.


Ingredients: 1 container of strawberries, white sugar, brown sugar (light or dark), 1 egg, soy milk, flour, cinnamon, butter, table salt, baking pan, oven.

-Rinse strawberries ONLY right before you are planning to use them *Do not rinse berries after you buy them or they will go bad very fast.  I have learned from experience.
-Cut strawberries in half/bite-size pieces and mix with 1/4 cup white sugar and 4 counts of water. *By counts I mean, put the bowl under the faucet and say, "1...2...3...4..." outloud. That will be about a tablespoon and a half. Put bowl aside and let sit.

-In separate bowl, add 1 1/2 cups of brown sugar, pinch of salt, 1 cup of flour, dash of cinnamon.  -Combine 1 1/2 cups soy milk and 1 egg in another bowl. Stir.  Add one bowl to the other *Reminder: I am not a textbook chef. I do not prefer/really know how to justify adding wet ingredients to dry or dry ingredients to wet.

-Take 3 spoonfuls of butter (any kind, whatever type you have in the refrigerator) and put in small bowl. Place in microwave for 30 seconds until melted/soft.  Pour in bottom of sprayed baking pan. Then add the wet, dough-like mixture.  Next add the berry mixture including the sugary syrup at the bottom of the bowl!

-Bake at 350 degrees for 35-40 minutes. Cover (with foil or a lid) for 25 minutes then remove.  Keep an eye on it! Set timer for 25 minutes and check. *Get in the habit of checking your meals etc. then it will never be too late to change something you don't like. How will you know when it is finished? A knife should be able to slit through the middle and come out 80% clean.  

Jonathan's recommendation: Serve with ice cream.
