Carribeasian Shrimp and Grits

Ingredients: Grits (slow or quick cook), 2-3 cups Cheddar Cheese, De-veined Shrimp (size you prefer), Handful of Edamame Beans, 1/2 Red Onion, 2 Mangoes, 1 Tomato, Salt, Pepper, Old Bay Blackened Seasoning, Crushed Red Pepper Flakes, Apple-Cider Vinegar, Sweet White Wine

-Combine 1/2 diced Red Onion, 2 Mangoes cubed, 1 Tomato diced, Handful of de-shelled Edamame Beans, Salt, Pepper, Splash of Apple-Cider Vinegar and Splash of Sweet White Wine.
-Follow instructions to make grits. Melt in 2-3 cups of Cheddar Cheese.
-Pan sear shrimp in olive oil. Add Old Bay Blackened Seasoning, Salt, Pepper, and Crushed Red Pepper Flakes. *Do not overcook, they will continue to cook when you take them off the heat
-Plate with grits on the bottom, salsa in the middle and top with shrimp. Enjoy!
