This rich and cheesy recipe is great for a hearty appetite. You won't even notice there aren't noodles in it (trust me, I have a taste-testing husband who would let me know if it needed noodles). Delicious! I don't even like lasagna! But this I enjoyed.
Ingredients: Mozzarella Cheese (about 12-14 slices), 1 Yellow Squash, 2 Zucchini's, 1 Eggplant, Tomato Sauce *your favorite brand or even better make it yourself!, 1/2 Cup Sliced Mushrooms, Morningstar Meatless Crumbles, Fresh Parsley, Italian Seasoning, Salt, Pepper, Garlic Salt, 2 Cloves of Garlic, 1/2 White Onion
-Spray any size casserole dish with non-stick cooking spray *size does not matter, this is a layered recipe so you can just adapt the layers or make more if it is deeper.
-In large bowl combine diced mushrooms, diced onion, approximately 3 spoonfuls of fresh chopped parsley, salt, pepper, 2 minced garlic cloves, and the meat crumbles *If you use real meat, cook it prior to mixing it in the bowl. *The Morningstar Meatless Crumbles can be mixed in directly out of the freezer because they will cook enough in the oven. The sauce should be relatively thick because the vegetables have natural water and juice that will come out while cooking.
-Slice the zucchini's, eggplant and squash. I remove the skin of the eggplant and keep the skin on the zucchini and squash.
-Now layer time! You can do whatever you want, this is what I did:
Layer one - Yellow Squash, Garlic Salt, Pepper, Italian Seasoning
Layer two - Zucchini, Garlic Salt, Pepper, Italian Seasoning
Layer three - Tomato Sauce Mixture
Layer four - Cheese
Layer five - Eggplant, Garlic Salt, Pepper, Italian Seasoning
Layer six - Tomato Sauce Mixture
Layer seven - Cheese, Italian Seasoning, Salt, Pepper
-Bake covered with foil, in oven at 400 degrees for about 45 minutes. Remove the foil and bake until the top is lightly browned and cheese is bubbling. (for our oven it took about 20 minutes)
-Garnish with fresh parsley!
